How do you actually do an info diet?

I found out that despite multiple heart-to-heart discussions, tears shed on both ends, and promises made, my dad has still been providing information about me to my NC nmom (they're divorced). I feel betrayed and tired and numb. Now that I know for sure that I can't trust him - but I don't want to go NC with him - I need to put him on an info diet.

So for those of you who do this, what are some things to make sure you don't share? Is there anything I might not think of? How do you have conversations with people who are on an info diet - just talk about movies or something? Do you inform the person ahead of time that you're putting them on the info diet, or do you just start?
